Good Eats Granola

A little goes a long way with granola – it can be high in calories but it is packed with good fats and carbs. Ideally I will eat no more than 2 spoonfuls per day to give me my daily fiber and the nuts. When I started with 21 Day Fix and I decided adapt my favorite recipe to stay true to clean eating. Be sure to use unrefined coconut oil.


  • 5 cups old fashioned oats *
  • 3/4 cup almond, slivered or chopped
  • 3/4 cup pecans, chopped
  • 1/2 cup dried unsweetened cranberries
  • 1/2 cup shredded coconut
  • 1/3 cup pumpkin seeds
  • 1/3 cup sunflower seeds
  • sprinkle of sea salt
  • sprinkle of cinnamon

choose one of the sweeteners below – The honey based is more clean eating friendly alternative.

honey based

  • 1/4 cup honey
  • 1/4 cup maple syrup
  • 1/4 cup unrefined coconut oil

agave based

  • 1/2 cup agave syrup
  • 1/3 cup maple syrup
  • 1/4 cup unrefined coconut oil

Granola Ingredients


  • Preheat oven to 350F
  • Combine all dry ingredients in a 9 1/2 x 11 pan. The pan should be non-stick, stoneware or lined with parchment.
  • Mix the agave based or honey based sweetener in a saucepan over low heat. Once pour over the granola in the pan and mix well.
  • Place granola mix in the oven for 30 minutes stirring every 10 minutes to make sure the sweetener is mixed well.
  • Drop the temperature to 250F for the next 20 minutes. Continue to stir every 10 minutes.
  • The granola mix should be browned nicely – continue to stir as needed. Wait until it is dry before storing.

21 Day Fix

I’m repeating the ingredients from above but if you want to stay true to clean eating these make a difference:

  • unsweetened cranberries – technically cranberries are not on the list of allowed foods. You can omit these or use another dried fruit such as cherries. DO NOT use dehydrated fruit – it will burn.
  • extra virgin coconut oil
  • Use the honey based sweetener. Maple syrup, honey and coconut oil are not on the allowed food list technically allowed foods in the the 21 Day Fix plan but they are used in some of the recipes in the program. Sweeteners should be used sparingly when you are on the plan.
